Pasta, roasted loin, tomato and cheese salad
- 3 slices Sliced roasted loin HM Caneira, cut into thin strips;
- 125 g short pasta (for instance, fusilli);
- 100 g mix of cubed cheese for salads;
- 1 vine tomato, sliced;
- 1 carrot, grated;
- 8 olives;
- dried oregano.
For the sauce
Cook the pasta, according to the package instructions. Drain well and run under cold water.
In as alad bowl, place the cold pasta and add the tomato, carrot and cheese. Prepare the sauce. In a bowl, whisk the olive oil with the lemon juice. Season with salt. Drizzle over the pasta and toss.
Garnish with the roasted loin strips, olives and oregano. Serve immediately.
