Suckling pig salad with rocket, cashew nuts and peanuts
- 200 g Shredded suckling pig HM Caneira;
- 100 g rocket;
- 1/2 medium gherkin, finely sliced;
- 1 small red onion, chopped;
- 1 boiled egg, grated;
- 8 cashew nuts, chopped;
- 1 heaping tablespoon peanuts;
- soya sauce.
In a salad bowl, mix the rocket, gherkin, red onion and boiled egg. Season the salad with soya sauce and garnish with the chopped cashew nuts and the peanuts.
