1 package pig’s trotters (Pezinhos de porco de coentrada)
1 dl olive oil
2 onions, chopped
4 garlic cloves, chopped
1 laurel leaf
2 cups rice
1 big coriander bunch, chopped
0,5 dl vinegar
1 tablespoon wheat flour
In a big pan, heat the olive oil and fry the chopped onion and garlic with the laurel leaf.
When the onion is translucid, add the rice and fry for 2 minutes, always stirring.
Add 4 cups of boiling water. When it starts to boil, season with salt and boil for 7 minutes. Turn the heat off and add the chopped coriander. Let the pan stand, with the lid on, for another 5 minutes.
Mix the vinegar with the flour. Stir this mixture in the pig’s trotters, together with its sauce, and mix very well. Stir in the rice pan and take to medium heat for 2 minutes, or till it starts to thicken. Serve immediately.
