1 package pork belly (entremeada)
1 dl olive oil
1 garlic clove, chopped
1 onion, chopped
1 carrot, sliced
4 tablespoons tomato passata
2 tablespoons vinegar
3 tablespoons any beans (optional)
1 cup rice
1 orange, sliced
4 basil leaves

How to
In a pan, heat the olive oil and sauté the garlic, the onion and the carrot. Add 2 cups of water. When it starts to boil, add the tomato passata, the vinegar and the beans.
When it comes to the boil again, add the rice and cook with the pan for about 15 minutes, or till the rice is cooked. If necessary, add some more boiling water. Serve the rice with the slices of pork belly and the orange. Garnish with the basil leaves.
